Family-Friendly Baja Bowls

Mexican-inspired flavors are often a crowd pleaser, even when it comes to little ones. Our Baja Black Bean and Rice Bowls are a perfect way to switch things up for your next Taco Tuesday or any night of the week! They’re easy to assemble, packed with protein, and of course, delicious! What’s not to love?  

Here’s what you’ll need:

  • 1 lb. brown rice, dry
  • 1 can black beans, drained
  • ½ lb. shredded cheese
  • 1-2 cups corn (drained or cut fresh off the cob)
  • 1 cup salsa
  • Salt and pepper, to taste

Now it’s time to prepare each ingredient:

  1. Cook your brown rice according to the package directions. Let it simmer and absorb the water while you prep the rest of the items.
  2. If you’re using canned corn, make sure it’s drained before you warm it up. You can also cook corn on the cob and then cut the kernels off. Season with salt and pepper, to taste.
  3. Drain a can of black beans and warm them up using either a microwave-safe dish or low-heat setting on the stove.

This meal works best when served in a family-dining style and should easily serve at least four people. To do so, place each item on the table for your family members to dig into while building their individual Baja bowls. The brown rice provides the base and everything else can be mixed in to suit each person. No matter how you assemble your bowl, it’s sure to be a dinner your whole family will love.

Consider mixing some cumin into your bowl for some added flavor. You may also want to top it with a delicious, healthy garnish like sliced avocado, chopped cilantro, or a dollop of sour cream. Download the recipe card here, so you can keep it close for future use!
